Card selection is almost entirely to preference, but I would strongly advocate for modal cards. The deck has a 1/60 chance of finding any given card, so its best to maximize each card's number of possibilities. For example, Assassin's trophy is near unconditional, single target removal and so has a great number of applications. Other cards like Simic Charm can see play because they offer several options. It doesn't really matter that a card is low power if it can see many uses. For this same reason adventure cards like hypnotic sprite are used. They can be cast and recast over multiple turns and so add more play variety.
Some of my favorite pet cards in this particular list include: Mire Triton, Pteramander, Whirlwind Denial and Fortune's Favor.
To play and win the Fortune's Favor minigame, I would offer this advice. The opponent will create 2 piles from 4 cards. One pile will be face up and the other will be face down. The opponent's goal is to 'trick' you into taking the lesser pile. Your goal is NOT to take the best pile, it is to find the card(s) you NEED. Treat the minigame like you're evaluating an opening hand. Do the revealed cards do anything to fix the current board state? If not then you ought pick the face down pile. By playing Fortune's Favor in this way, even when the opponent 'tricks' you, the minigame has still gone favorably for you. In the case you pick the 'worst' pile because you judged the face up pile to have nothing you needed, do not worry. By selecting bad cards you have only proven all of the top 4 cards of your library were inconsequential. In this case was the worst pile really that far from the best?
In some matchups a particular card can be underwhelming so the sideboard isn't intended to provide silver bullets. These cards are more efficient means of controlling the opponent's field and come in over cards that do nothing in particular for a matchup. For example, against burn, some cards are too much cmc to be cast in time and other cards like Whirlwind denial don't do enough and should be replaced by mass board wipes and low cmc answers to try and stall out the game.
