It says only power, but the toughness isn't listed
I assume it stays at 3?

Also, nothing triggers at untapped step
It would be put on to the stack at the very beginning of the upkeep, before his ability triggers if his toughness was also equal to it.
You could however respond to he destruction by dealing damage, negating the 0 toughness effect
