This deck:

looks like a safer version.  They're budgeting more cards to scry for quest while you're trying to delay with bounce until you draw it.

Care to explain what you mean by safer? It looks pretty similar to me, with the exception that this deck uses sage of epityr to stack while im running index and sigiled starfish. Well and they're running Kiora but I really prefer not to run planeswalkers if I can avoid it.

Oops didn't see your edit in time. Is there a reason sage is preferable to index? I wanted to avoid the deck being creature heavy.

By safer I actually meant their choice of big leviathans.  I'd argue that Inkwell/Stormtide Leviathan are better to have out than Tomokratis/Wrexial/Nemesis.

Also, surely you want a creature heavy deck to fuel Quest?

You're right on all counts but I guess I just find the graveyard play with nemesis and wrexial more interesting than bashing my opponent with inkwell or stormtide  :P
Definitely replacing index with sage though
