Let's assume my opponent has exiled one of my cards with an oblivion ring.

What happens if I exile my opponents oblivion ring with an oblivion ring?
Do I get back my card that was exiled by my opponents oblivion ring?

yes, Oblivion ring states "When Oblivion Ring leaves the battelfield, return the exiled card to the battlefield under its owner's control". So exiling their oblivion ring would make it leave the battlefield, in turn, returning the card that was originally exiled.

The thing I am not sure is that exiling something (removing it from the game) is not the same as leaving the battlefield and therefore LTB effects might not trigger?

The LTB trigger will kick in if a permanent were exiled. Same thing when it's put in the graveyard too.
