For sure; great idea. Titanic Growth is really only there to give you some bigger hitters until you get your Assault Formation out but either of those two would be great alternatives if you're happy to wait and then counter-attack...

I actually play a variation of this in regular standard constructed play and it goes alright. You spend a lot of time tapping/frogging their creatures and then hitting with 5/5s and 4/4s. The frogs work best when applied once they have declared attackers but before they declare blockers. Losing a 5/5 with flying to a Keeper of the Lens is pretty upsetting.

At the moment its a bit experimental in that it relies on other stuff to provide creatures and includes no creatures you can cast from you hand. There are, until October, Standard-legal Enchantment Creatures from the Theros block which you could use instead and would work quite well in a deck like this. The point of this deck was that it was ORI only and so Standard-legal. But you could likely build a much better Standard-legal deck if you included stuff from Khans and Dragons which will remain in Standard for a while.

I really like this, but I'm not sure about the logic of having 3 Chief Engineers vs. 5 notionally "expensive" artifacts (Hangarback Walker and Scuttling Doom Engine). Is there really a huge need to convoke for those? You seem to be giving yourself plenty of options in terms of mana. Maybe a couple of Chief of the Foundry? Make those Ornithopter useful before you Ensoul Artifact them and make them 6/6...

Nah, Ornithopter relies too heavily on Chief of the Foundry in a deck like this. Great flying blocker for the first couple of turns, sure, but no capacity to attack. On the other hand, Keeper of the Lens gives you a second-turn attack and then a 2-attack from turn 3 if you get a Chief of the Foundry out. It also screws morph and manifest decks leaving them without surprises. I run something similar with less instants and with a couple of Angel's Tombs (for the CotF / Thopter Spy Network combo) and a couple of Guardians of Meletis. With a Chief of the Foundry they are 1/7 for 3 and will shut down Goblins and small creatures decks.
