This is mostly just going to be a hobby for me, but i will say you'd actually be surprised by some of the cards in the decks that i currently have already built and ready to go. Not meta by any means, but most arent absolute junk. The main goal for this is to get something out there for people that are already into modern something new to tinker with and to get some somewhat fairly easy to use decks into the hands of people that want to start playing modern at an affordable price.
I am going to include a preamble that I only play Edh, so take this with a huge grain of salt I may be completely off base, but you are asking for opinions, so I would assume you also want bad ones, it IS the internet after all
SO, if I am understanding correctly, you are thinking about taking hours and hours of your time to sort and assemble stacks of 73 cards from your collection that are Standard LEGAL, almost certainly not Standard PLAYABLE if you plan on selling them for $15-$20.
I have stacks and stacks and stacks of common, uncommon, and bulk rare cards laying around my house I could sort into Standard legal piles and throw them together. So, for my $20 you would charge me, all I am getting out of it is time. I assume at that low of a price point I will not be getting any good/useful cards that I would be excited about adding to my collection.
If I go look at the current Meta for Standard PLAYABLE decks, most of them cost about $800-$1200 USD at TCGPlayer midpoint price, with a lot of budget decks coming in from $100-$150 and some up to $500 that probably lose to a better Modern deck on turn 3 every time unless you had a perfect cheap sideboard that could shut down exactly what your opponent is playing.
Overall, my opinion/advice for you would be to go watch the episode of Big Bang Theory where the guys help Penny start her online sales for her Penny Blossom's. After days of stress taking and fulfilling orders, they add up her profits and she has made something like $8...
If it's something you have a ton of passion for and it would just be a hobby to you, and your customers did not care about how quickly their product arrived or what cards they received, then great I hope you have a blast doing it. To me, my opinion, it sounds like a TON of work for you to make $0 profit and your time packaging and shipping and driving to the post office and that's on top of sorting and assembling the decks.
I would think you would need a price point of something like $250 to even consider doing it, and that would mean sending out people $200 worth of product to leave yourself some meat on the bone for your effort, and mostly the time it would take you to do something like that.
