Hi!
I wanted to build a Yuriko deck and i have a question related to Grazilaxx, Illithid Scholar and Ninjutsu.
Here´s my question: I`m attacking (f. ex.) with any unblockable creature and Yuriko, the tiger´s shadow, while Grazilaxx(he let you bounce blocked creatures) is on the field and my opponent blocks Yuriko, can I bounce her back on my hand with Grazilaxx and immediately ninjutsu her with the unblockable?

Yes you can.
Combat consists of 5 phases; Beginning, Declare Attackers, Declare Blockers, Combat Damage, and End of Combat.
Ninjutsu is usable in the final three phases, though applications of using it after Combat Damage are exceedingly rare. In this particular case, both actions can be taken during the Declare Blockers phase once priority comes back around to you.
