Against mill strategies it's most important to get Eerie Ultimatum into your hand and keep it as long as you can without doing suspicously little or until all important cards are in your graveyard. Then you can win from there.
Cards like Genesis Ultimatum, Deploy the Gatewatch, Consecrated Sphinx and the more expancive Bolas Planeswalkers are good to make your opponents think your playing a value deck centered arround dumping Walkers and using their value, while you play a purely combo centred control deck.
Use creatures to block in a way that you can most likely get really impactful ultimates out of your walkers. There are only a few walkers whos ultimate actually matters:
Ugin, the Spirit Dragon; Tamiyo, the Moon Sage; Tamiyo, Field Researcher; Ashiok, Nightmare Muse; Nicol Bolas, Dragon-God; Teferi, Master of Time; Ral Zarek & Jace, Architect of Thought; Samut, the Tested; Teferi, Hero of Dominaria if the Situation favors them.
E.g. you don't need an Jace AoT ulti without means to bring him back or a doubling season on board, neither is samut really useful without the Doubling Season. Ashiok should be obvious and Teferi, Hero of Dominaria can go down to 1 from 8 for all I care if I don't draw more than one card each rotation.
