"Junding them out" refers to grinding opponents down after you have torn their gameplan apart. In 60 card formats this is accomplished by targeted discard and targeted removal, which is clearly a bad idea in edh.
In edh you shut down gameplans by attacking the one thing almost all edh decks have in common: reliance on lots of mana. Lands are the sacred cow of edh, and windgrace is here to make them into delicious cheeseburgers.
This deck aims to drag the game out by destroying everyone's lands and creatures (possibly artifacts) while having windgrace in play. From there, I get my lands back with windgrace and continue to ramp, gaining a huge mana advantage.
