Personally, I'd say the issue with that suggestion is just that with your deck there's very few repeatable recursion options, so relying on sacrifice alone to ramp means it comes into conflict with other utility options.
I'd make sure to include Shirei, Shizo's Caretaker to handle recurring utility creatures like Caustic Caterpillar, Sakura-Tribe Elder, and Spore Frog. I'd also make it a point to put in Phyrexian Reclamation, so that once Meren's picking up the more expensive creatures you can still keep getting the cheaper ones back.
Then, to minimize the conflicts for recursion some more, I'd put in Silverglade Pathfinder instead of Dawntreader Elk. Why bother with getting the elk back after using it to ramp, when you could just add ramping to the process of setting up more powerful creatures for reanimation instead?
As for the suggestion of cutting cards to protect Meren, I wouldn't suggest it myself. Especially not on the grounds of "doesn't need combat to win". Someone exiling her to slow down or shutdown all of your reanimation efforts is pretty good incentive to include a few cards to make sure they can't.
