Guidelines to the Archetypes:
Each archetype should have at least one two and one three colour legendary creature that supports the archetype. It should have at least two draw engines, one planeswalker and one boardwipe(ish) card.

Guidelines for the Non-Aligned Cards:
Each color should have 2 removal spells, at least one card advante card and at least one signature card (like ramp in green, or counterspells in blue). The rest can be any card I like as long as it doesn't create an imbalance of colour distribution.

In total this should make 12 Packs of 26 cards making everyone draft 78 cards. With 41 draftable lands in total there are approximately 68 non-land cards among those 78 . Assuming that all drafted lands are being played we get the following two scenarios:
For a 60 card deck with an average land count of 23 lands, this would leave 37 non-land cards resulting in 31 cards that are drafted but not used.
For a 80 card deck with an average land count of 31 lands, this would leave 49 non-land cards resulting in 19 cards that are drafted but not used.
(60 card decks are probably better, as that would result in only 17 non-archetype cards, rather than 37 non-archetype cards per deck).
